Grandma's Corn Pudding

This is a classic Southern corn pudding recipe.

Ingredients

  • 1 can cream corn
  • 1 can kernel corn drained
  • 1 1/2 tbsp cornstarch
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup sugar add up to 1/2 cup for sweeter corn pudding
  • 4 tbsp butter
  • 1/4 tsp salt
  • 1/4 cup half and half

Instructions

  • In a large bowl combine all the ingredients except the cream corn and kernel corn. Whisk until well combined. Make sure there are no lumps from the cornstarch.
  • Add in the cream corn and kernel corn. Mix well.
  • Grease a 9x7in casserole dish with butter.
  • Pour in the mixture.
  • Bake at 375 degrees for 30-35 minutes or until the top is golden brown.
  • Allow to cool for at least 10 minutes before serving. This dish can be served warm, at room temperature, or cold.

Notes

If you want to make a 9x13in casserole then double the recipe. The cook time will increase to about 55-60 minutes.
This dish needs to be made in a flat casserole dish. If it becomes too deep it won't set correctly in the given bake time.
